  • (Semi) healthy pizza in less than 10 min!

    Excuse the photo quality, this was taken on my Droid, but I’ve been on a huge pizza streak. I usually get infatuated with a food item and make it over and over again with slight modifications until I get sick of it and move on to my next food interest.

    I’m also all about food that is easy to prep with minimal cook time so I don’t stuff a Think Thin bar down my throat while waiting for my dinner to finish (which, by the way, cannot be good for you at all since I can’t understand half the ingredients in that bar but it tastes soo good).

    Anyway, back to the main point, here’s a whole-wheat pita pizza that I made in less than ten minutes. On my pizza, I have:

    • Pizza sauce (from Trader Joe’s)
    • Mozzarella and smoked gruyere cheese (I used low-fat mozzarella since I apparently have high cholesterol and am really hung up on this fact so be prepared for additional posts in the future addressing this tragic issue)
    • Sliced yellow heirloom tomatoes (for color, you can use any type of tomato, and make sure to remove the juicy seeds and bits before putting it on your pizza to avoid sogginess)
    • Minced garlic/shallots
    • Fresh thyme
    • Dried oregano
    • Sea salt and pepper

    Just toss all that on your pizza and set it in your 450-degree conventional oven for about 6 to 8 minutes. Done!

    The best thing about this is that you can modify it however you like. For example, you could use pesto instead of tomato sauce, tortilla instead of pita (or even on Quaker rice cakes like my friend Naz did sophomore year at college) or perhaps goat cheese to make this lactose-intolerant-friendly (I just happened to have mozzarella and smoked gruyere). I should have added some basil for more color, but I only used whatever I had in my fridge, so feel free to experiment and use up that last bit of bell pepper or artichoke hearts you have laying around! 

    (By the way, in no way am I a food expert, but I love sharing things that excite me so if you have any ideas about tasty and healthy food that’s easy to prepare, I would love to share it too!…..you are probably judging me right now. It’s ok, I would too).
